Udo's Roasted Pepper Hummus

Ingredients

1 teaspoon of Udo’s Choice Ultimate Oil Blend
450g chickpeas (fresh)
120ml of tahini
Juice of 1 lemon
1 clove of garlic
1 large roasted red pepper
Parsley and paprika (to garnish)

Drizzle Udo’s Oil over this homemade hummus recipe..... a healthy twist on an all-time favourite.

   

   

METHOD

Soak the chickpeas overnight. Change the water and boil for about one and a half hours until the chickpeas are tender. Drain and allow to cool.

Place the chickpeas in food processor and add crushed cloves of garlic, Udo’s Choice Ultimate Oil Blend, lemon juice, tahini and the roasted red pepper. Blend until smooth and refrigerate.

Add more Udo’s Choice Ultimate Oil Blend if you desire a lighter consistency.

   

SERVE 

A delicious snack with toasted wholemeal pitta bread. Garnish with parsley and paprika.
