A tropical blend of tangy pineapple and creamy coconut milk making a healthier version of your favourite cocktail!
METHOD
Shave the skin off the pineapple and chop up the flesh
Transfer all the ingredients into a blender, including the ice cubes and blend until desired consistency is reached
Garnish with some mint
Serve immediately
TIPS
Make your own coconut milk by blending 1 cup of dried desiccated coconut with 3 cups pure water, then strain the milk using a sieve, cheese cloth or a nut milk bag.
