MAKES: 12 bars PREP TIME: 20 minutes SET TIME: 4 hours
Salted caramel bars, laced with seeds and Udo’s greens to power you though the day!
METHOD:
Place the coconut milk and sugar in a saucepan and simmer on a medium heat, stirring often to make a caramel. After ten minutes the colour will darken and the caramel will thicken and the caramel is ready. Pour the caramel into a bowl to cool, slightly.
Mix the tahini, melted oils and Udo’s oil to the slightly cooled caramel and then fold through the dry ingredients.
Choose whether to use the greens in all the bars or just some for a contrast in colour and flavour.
Line a 2cm deep 20 x 20cm baking tray with baking paper and press the mixture into the tray making sure it is flat and even.
Set in the fridge for at least 4 hours until the bars are hard to touch.
Cut the bars into 12 evenly sizes pieces and store in the fridge for up to one week.
